Why We Get Fat

As I mentioned last week, I have been reading Why We Get Fat by Gary Taubes, and I finished a few days ago. This book deserves a second read at some point, as it is packed with countless sources and evidence debunking the myth that fat makes us fat. One powerful point he makes is that we do not get fat because we eat too much; we eat too much because we get fat. In other words, the Standard American Diet of processed foods and easily digestible carbohydrates creates a vicious cycle leading to insulin resistance and all the wonderful diseases of civilization that come with it.

I would highly recommend this book to anyone looking for a straightforward primer on nutritional science. I would especially recommend to the skeptics (we all know them) who believe that eating more fat is going to kill everyone in the primal community.

    Well put PaleoJoe. I agree that this is an excellent primer for folks that want to learn the science behind food, but don’t want to spend all the time it takes to read a monster book like Good Calories, Bad Calories.
