Why McDonald’s Fries Taste So Good

About 90 percent of the money that Americans now spend on food goes to buy processed food.

Open a (non-Primal eating) American’s refrigerator, freezer, or kitchen cupboard, and look at the labels on the packaged food. You’ll find “natural flavor” or “artificial flavor” in just about every list of ingredients.

These ingredients help to explain why most processed food — indeed, most of the food Americans eat today — tastes the way it does.

The canning, freezing, and dehydrating techniques used in processing destroy most of food’s flavor — and so a vast industry has arisen in theUnited Statesto make processed food palatable. Without this flavor industry today’s processed food would not exist.

Check out this excellent book excerpt on the flavor industry, and the Flavorists who create the aroma and taste of processed foods.

    wow, fascinating.

For me, flavor is one of the biggest hurdles to eating primal. The real thing just tastes so different…er, weird!

We’re on day 3 of eating primal, and I haven’t noticed a lacking in flavor. It definitely helps that we both work at home and have that much more control over our meals, but between avocados, coconut milk, fresh fruit, and the various spices we’ve amassed, these past meals have been the best of the year by far.

Funny thing is I spent less on groceries yesterday than I had in 7 years…

Totally. When you only shop the perimeter of the grocery store, you hit up the meat, eggs & produce sections and avoid all the processed junk that fill up the inside isles. Compare the price per pound of real food with that of processed packaged food, and you absolutely get better value for your money.

  4. Fast Food Nation does a great job in describing the flavoring process for their french fries.
