Easy Meals on the Cheap

When it comes to eating Primal, meat & veggies reign supreme.  So why not throw a bunch in a pot, and have several complete meals with minimal kitchen time?   That’s the brilliance of the slow cooker.   It’s great for beginning cooks because all you have to do is fill it and turn it on.

Chances are you already have a slow cooker (aka Crockpot) hidden in some kitchen pantry.  If not, you can pick up a small one for as little as $10, or hit up Amazon.com for a great selection.

Slow Cookers have two cook temperatures: Low (~170 °F) and High (~190-200 °F), and use moist heat combined with long cooking times to turn inexpensive cuts of meat into super tender, melt in your mouth meals!  A slow cooker softens the connective tissue without toughening the muscle.

A general rule of thumb is to cook meat & veggies for 4hrs on High, or 8hrs on Low.

There’s quite a few excellent Primal slow cooker recipes on the web, including super simple recipes for three can chuck roast, scrumptious slow cooker chicken, carnitas, and pork stuffed peppers.  You can also try my pressure cooker chili/stew recipes.  Or, if you’re feeling adventurous, try some Primal recommended offal like beef tongue or hearts on fire!

      Not yet! The boldest I’ve gotten is liver & onions. But there’s a hispanic market not too far from my house that sells beef heart & beef tongue. It remains to be seen if I have the cahones to cook them up sometime!
